This dish is perfect for dinner, and even better for breakfast! As long as you have time to let it bake in the oven (about 50 minutes), you’re set!
– 4 whole eggs
– 2 egg whites
– 3/4 cup plain nonfat Greek yogurt
– 1/4 cup loosely packed, finely shredded cheddar or Swiss cheese
– 1-1/2 cup cooked veggies, drained of any liquids
I like using broccoli, mushrooms, spinach, etc.
– Salt & pepper to taste
1.) Whisk the first three ingredients in a bowl until combined.
2.) Mix in the cheese, vegetables, and salt and pepper.
3.) Pour the mixture into a greased casserole or pie dish (I use olive oil) and bake for 45-50 minutes, or until set…not jiggly 😉
