Spring time means picnic season, and what better way to celebrate than to stock up on great sandwich ideas?
-Grilled zucchini, eggplant, and onion with tomato and fresh basil or pesto
-Shredded chicken (leftovers) with avocado, sprouts, and tomato
-Grilled portobello with caramelized onions, fresh mozzarella, and balsamic glaze
-Sliced apples with brie and arugula
-Hummus, sundried tomato, grilled vegetables
-Sliced hard boiled eggs, mayonnaise, mustard, raw spinach
Perfect Packing Preparation:
1. Avoid the soggy sandwich. Any wet ingredients such as tomato, fresh mozzarella, and sauces should be added to the sandwich just before you eat. You may even decide to assemble the entire sandwich at the picnic.
2. Choose a sturdy bread, especially if you have a lot of moisture in the
sandwich. Whole wheat breads tend to do better than white breads, and taste better too! (And of course, are better for you.)
3. When packing the sandwiches, line the foil, plastic wrap, or wax paper with a paper towel first. This will prevent the sandwich from getting soggy. Go an extra step and also wrap all the sandwiches in a closed plastic bag to contain spills which might occur in the picnic basket.
